Pub-style Beer Battered Fish with Savory Roast Vegetables

Ingredients
4 High Liner Family Favourites® Beer Battered Fillets
3 cups cauliflower florets
1 red pepper, seeded and cut into wide strips
1/2 red onion, cut into thin wedges
3 tbsp olive oil
1 garlic clove, minced
1 tbsp fresh thyme, chopped
salt and pepper, to taste
Preparation
- In a large bowl, combine florets, red pepper and red onion.
- Toss with oil, salt and pepper.
- Place vegetables in roasting pan in single layer.
- Bake at 425°F (220°C) for 20 minutes, stirring every 5 minutes or so.
- Bake fish fillets according to package directions.
- Toss vegetables with garlic and thyme and continue baking for 5 minutes longer or until tender and browned.
