Ceviche De Pescado with Wild Alaska Pollock

Ingredients:
4 Frozen Wild Alaska Pollock Fillets
8-10 Limes
3 Tomatoes
¼ onion
½ cup of cilantro
½ cup of shredded carrots
Salt and pepper
Directions:
1. Place frozen fillets underwater for 5 minutes. Semi-frozen, dice fillets and place in a long, flat container.
2. Squeeze limes and add juice to Wild Alaska Pollock
