Cauliflower Fried "Rice" with Surimi

Ingredients
- 1 pkg (12 oz) Simply Surimi, Flake Style
- 1 medium head cauliflower, cut into florets
- 3 tbsp vegetable oil, divided
- 2 eggs, lightly beaten
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups diced frozen mixed vegetables
- 1/4 cup gluten-free tamari
- 1/4 cup chopped green onions, divided
Directions
In a food processor, pulse cauliflower until finely chopped into rice-like pieces. Heat 1 tbsp oil in nonstick skillet set over medium heat; cook eggs, stirring occasionally, until set and soft curds have formed. Transfer to a plate. Add remaining oil to a skillet set over medium heat; cook onion and garlic, stirring, for about 5 minutes or until softened. Add cauliflower and mixed vegetables; cook, stirring, for about 5 minutes or until vegetables are tender but not mushy. Stir in Simply Surimi, scrambled eggs, tamari, and half of the green onions; cook, stirring, for about 2 minutes or until surimi is warmed through. Sprinkle remaining green onions over top before serving.
Tips: To add crunch, top with chopped peanuts or almonds before serving.
Grate cauliflower on a box grater if desired.
